Week one of keto..

So daily updates are out, so a weekly blog post seems more reasonable! 🙂

I’m doing really great on sticking to the keto diet! I only had one day of weakness where my body was craving carbs- but I just had a few, just for one meal.

I have been cooking all of my meals, only eating at home-and feeling much better! (Saving $ too!)

I bought some ketosis strips from CVS- They are showing small amounts of ketones in my system, so I need to play with my diet to see what I can do to get in full blown ketosis.

There were a few days last week where I had very little energy, but I powered through and got over the “carb flu”.

My favorite recipe that has saved me is keto pancakes- very simple recipe, but makes you feel like you’re eating a pancake! I added some cool whip and a tiny bit of sugar free syrup- so it cured my sweet tooth.

Cauliflower is replacing all the rice I consume, and I’m adding lots of healthy fats, especially BUTTER!

I am much less achy!! I’m not swollen, I feel leaner and my brain fog has lessened-and I’M DOWN 4 lbs!!!

So far so good, I have no plans of quitting this plan anytime soon!


Auto-immune disease & Keto diet

I was recently diagnosed with auto-immune disease. They don’t quite know for sure WHICH AI disease it is, but rheumatoid arthritis is involved. I am 34 years old, but I feel much older. I am frequently achy, fatigued, puffy, foggy and stiff. I started taking medication about a month ago, but it doesn’t seem to make a difference. I’ve been reading quite a bit about the correlation between the foods we eat and AI dz and came to the realization that I may be the one causing my own pain.

I don’t have a horrible diet- I don’t drink soda, I don’t drink any sugary drinks, I don’t eat a ton of sweets- but I do indulge more than I should. I love chips, tacos, pizza and grilled cheese sandwiches. If there is candy or cake at my house, I’ll usually eat it. I notice when I have a bad diet day I will wake up the next morning and my entire body will hurt, portions of my body hurt if I touch the area and my eyes will be puffy. It’s definitely a sugar hang over.

I decided that today is the day that sugar is getting cut out of my diet. I’m committing to 10 a 10 day sugar detox to see how I’ll feel. I’m hoping the inflammation that is plaguing my body will vacate the premises once and for all!

10 days doesn’t seem like much, but for me and my relationship with food- it’s a lifetime! I’ll try to post daily to update how I feel and to stay accountable.

Day 1:

Today I’m feeling hungry, but no crazy cravings- I weigh 154, which is normal for me.

I am extremely achy today, I took a pain pill in order to function. 😫 I did have a pancake, a sugar cookie, and a small amount of bread yesterday. More carbs than usual, but not an extreme amount.

My amazing luck continues…

Last weekend a friend and I decided to spend the weekend at our lake house. It is pretty cold in Oklahoma, but a nice, quiet weekend sounded perfect. The weather was better than we expected and we actually saw several eagles! (I love looking for eagles, I’m pretty sure they are my spirit animal-after the unicorn of course!) 🦄🦅

It got dark early, so we ventured out to one of the nearby (nearby at the lake is about an hour drive) casinos. I couldn’t decide which casino I wanted to go to, so I had my friend flip a coin-Cherokee casino won the toss!

We walk in and hear that they are giving away cash every 30 minutes to players club members. I renew my card and my friend signs up. We complete all our entries and head to the bar to get a drink and a bite to eat.

We weren’t even at the bar for 10 minutes and I hear my name over the intercom-so I went back to the players club area and asked what I had won- to my surprise, it was $1000 cash!!! Cash that I manifested by my thoughts

The fact that I won this didn’t surprise me.. I have coined myself as “The luckiest person I know” and I’m not shy to tell everyone that. What really gave me goosebumps about this event is that I had been listening to a specific podcast for 2 weeks prior titled “The money babe challenge, how to manifest $1000 into your life” I have been following the steps in the December Challenge, a few of them are below:

  • Treat money as if it is energy.
  • Be grateful for every cent you already have and every cent that comes into your life, no matter if it is just one penny!
  • Treat the money as if it is already yours and be thankful for it.
  • Don’t worry about how the money will appear, just know that it will

WOOWOO!!! It worked! You better believe I’m going to up this amount and follow these principles EVERY.SINGLE.DAY!

I continue to be amazed at the life I create with my mind. I am so grateful for everything I have and everything I have coming to me. I am so excited to see what I will manifest this year, and hope I can convince others that they can create any life they desire-you just have to believe it.



Word of the year

I’ve never heard of using a “word of the year” as a guide until recently, but when I did hear about it- I immediately knew what my 2018 word was going to be. A word to guide me and motivate me towards my goals. I’ve been in a very transformative period of my life for the past year – I’ve grown personally and professionally but it’s only left me craving more transformation. I’m obsessed with being the best possible Sarah I can be, in all areas of my life: the best wife, mother, employee, business owner, daughter and servant.

So it’s only fitting that my word of 2018 is GROWTH. I’ve got this word on my screensaver, my phone background, written in my journal, on my vision board- and other random places around my home and office. Anytime I see this word it’s just a small nudge to keep pushing through, that any type of resistance is an opportunity for growth.
